Delicious Pound Cake
3 sticks butter
1 stick margarine
2 cups sugar
3 cups flour
6 eggs
½ cup milk
1 tsp. baking powder
Pinch of salt
2 tbsp. lemon extract
Mix in order given and bake at 325 degrees for 1 hour and 25 minutes, or until the cake comes away from the sides.

BUTTER COOKIES
Cream
½ cup butter,
½ cup shortening,
¾ cup sugar until fluffy.
​Add 1 beaten egg and 2 tsp. vanilla.
​Sift together
3 cups flour,
½ tsp. baking powder,
â…› tsp. salt.
​Add this to the cream mixture very gradually.
​Roll out on silpat mats or parchment paper and cut into desired shapes.
A cookie press may be used.
​Bake at 375 degrees until light brown.
PECAN PIE
1 cup white Corn Syrup
1 cup dark Brown Sugar
1/3 cup melted Butter
1 heaping cup of Pecan halves
3 Eggs
1 1/2 tsp Vanilla
1/2 tsp Salt
1/2 tsp Ground Cinnamon
Beat eggs until light, add sugar.
Add melted butter, syrup, vanilla, and salt and mix well.

Add pecans.
Pour into pie shell and bake at 300 degrees for approximately 40 minutes.
COCONUT PIE
(Makes 4)​

4 eggs
1 1/2 cups sugar
12 tbsp. melted butter
2 cups milk
1 tsp. vanilla
10 oz. coconut dash of salt
Combine all ingredients. Bake at 325 to 350 degrees for about 40 minutes, or until desired brown.
DEVILED EGGS
8 eggs, hard-boiled, sliced in two lengthwise (remove yolks)
2 tbsp. butter
½ tsp. dry mustard
¼ tsp. salt (more if desired)
3 tbsp. vinegar

Mix butter, mustard, salt, and vinegar together. Add mashed yolks and mix well. Add enough mayonnaise to make a creamy mixture. Fill eggs halves with mixture and sprinkle with paprika.
QUICK BANANA BREAD
4 cups biscuit mix
1 cup flour, sifted
1/2 tsp. baking soda
4 eggs, beaten
1 cup sour cream
2 cups mashed very ripe bananas
1 cup chopped nuts
Mix biscuit mix, sugar, flour and soda. Combine eggs and sour cream; stir into dry ingredients with bananas. Stir in nuts. Pour into 2 greased 9x5x3-inch loaf pans.
Bake at 350 degrees for 50 minutes or till it tests done.
Cool 10 minutes in pans; remove from pans and cool on wire racks.
Makes 2 loaves.

SOUR DOUGH STARTER

2 cups flour
1 ¾ cups of warm water
6 tsp. dry yeast
2 tbsp. honey
Combine flour and dry yeast in a bowl.
​
Mix honey in warm water and gradually add to dry ingredients.
​
Store it in pot at room temperature for 2 days to one week.
​
PIE CRUST
​
2 cups flour
1 cup shortening
1 tsp. salt
1/3 cup milk
1 tsp. vinegar
Mix the flour with the salt and shortening. Then mix the vinegar with the milk and add this to the flour mixture. Knead and roll out on floured board. This makes two large crusts.

SOUTHERBN GREEN BEANS
WITH HAMHOCKS
2 lbs. green beans (fresh or frozen)
2 cups water
3 smoked ham hocks
1 yellow onion (cut into small pieces)
4 garlic cloves (minced)
1 tsp. salt
1 tsp. pepper
Combine all ingredients in a 6-quart crock pot. Cover, set on low for six hours.
Stir after 3 hours and continue to cook until ham hocks and green beans are tender.
