QUICK BANANA BREAD

 

4 cups biscuit mix

1 cup flour, sifted

1/2 tsp. baking soda

4 eggs, beaten

1 cup sour cream

2 cups mashed very ripe bananas

1 cup chopped nuts

 

Mix biscuit mix, sugar, flour and soda. Combine eggs and sour cream; stir into dry ingredients with bananas. Stir in nuts. Pour into 2 greased 9x5x3-inch loaf pans.

 

Bake at 350 degrees for 50 minutes or till it tests done.

 

Cool 10 minutes in pans; remove from pans and cool on wire racks.

 

Makes 2 loaves.

Sour Dough Starter

​

2 cups flour

1 ¾ cups of warm water

6 tsp. dry yeast

2 tbsp. honey

 

Combine flour and dry yeast in a bowl.

​

Mix honey in warm water and gradually add to dry ingredients.

​

Store it in pot at room temperature for 2 days to one week.

​

Pie Crust

​

2 cups flour

1 cup shortening

1 tsp. salt

1/3 cup milk

1 tsp. vinegar

 

Mix the flour with the salt and shortening. Then mix the vinegar with the milk and add this to the flour mixture. Knead and roll out on floured board. This makes two large crusts.

Southern Green Beans with Ham Hocks

2 lbs. green beans (fresh or frozen)

2 cups water

3 smoked ham hocks

1 yellow onion (cut into small pieces)

4 garlic cloves (minced)

1 tsp. salt

1 tsp. pepper

 

Combine all ingredients in a 6-quart crock pot.  Cover, set on low for six hours. 

 

Stir after 3 hours and continue to cook until ham hocks and green beans are tender.
